Chicory, the root of the Belgian endive plant, is dry roasted, ground and used as a non-caffeine addition to enhance the flavor of Aunt Sally’s special dark roasted coffee. During the Civil War, chicory was added to extend coffee supplies during the blockade of the Port of New Orleans! It was sometimes even used as a 100% coffee substitute.
